Cheesy Bacon Potato Soup

Ideal as an appetizer, hearty enough for a main course, this tasty soup is an enticing combination of everyone’s favorite flavors.

Ingredients
- 8 strips Nueske smoked bacon, diced, fried, and drained
- 5 cups potatoes, diced into 1/2-inch cubes
- 1 1/2 cups celery, diced
- 1 1/2 cups onions, diced
- 1 1/2 tsp salt
- 12 oz can evaporated milk
- 2 Tbsp fresh parsley, chopped
- 1 cup milk (whole or half & half)
- 2 cups Velveeta® cheese, cubed
- pepper to taste
Directions
- Combine potatoes, celery, carrots, and onions in a large saucepan
- Add salt and enough water to cover vegetables
- Boil gently for 20 minutes (or until vegetables are tender)
- Slightly mash some (but not all) vegetables
- Add remaining ingredients and heat until bubbly
- Serve hot
