Cheesy Bacon Potato Soup

Ideal as an appetizer, hearty enough for a main course, this tasty soup is an enticing combination of everyone’s favorite flavors.

Serves: 8-10

Ingredients

  • 8 strips Nueske smoked bacon, diced, fried, and drained
  • 5 cups potatoes, diced into 1/2-inch cubes
  • 1 1/2 cups celery, diced
  • 1 1/2 cups onions, diced
  • 1 1/2 tsp salt
  • 12 oz can evaporated milk
  • 2 Tbsp fresh parsley, chopped
  • 1 cup milk (whole or half & half)
  • 2 cups Velveeta® cheese, cubed
  • pepper to taste

Directions

  1. Combine potatoes, celery, carrots, and onions in a large saucepan
  2. Add salt and enough water to cover vegetables
  3. Boil gently for 20 minutes (or until vegetables are tender)
  4. Slightly mash some (but not all) vegetables
  5. Add remaining ingredients and heat until bubbly
  6. Serve hot
