Smoked Turkey with Fusilla Pasta

Nueske Applewood Smoked Turkey and corkscrew pasta combine for this delicious entree with an Italian flair.

Serves: 4-6
Ingredients
- 1 cup Nueske smoked turkey breast, skinned and diced into 1/2 inch cubes
- 8 oz Fusilla (corkscrew) pasta
- 1 cup baby spinach leaves, stems trimmed
- 2/3 cup tomato, seeded, cut into 1/2 inch dice
- 1/2 - 1 1/2 cloves fresh minced garlic (to taste)
- 2 tsp Balsamic vinegar
- 2 Tbsp olive oil
- 2 Tbsp fresh basil leaves, coarsely chopped
- 1/8 tsp red pepper flakes
- salt to taste
- Parmesan cheese, grated
Directions
- Bring large pot of salted water to boil
- Add pasta and cook according to package directions
- Put olive oil, basil, garlic and spinach leaves (torn in half, if large) in large, shallow pasta dish; toss until mixed
- Drain cooked pasta, retaining ½ cup pasta cooking liquid
- Immediately add pasta to olive oil mixture; toss well
- Add reserved pasta cooking liquid toss well again
- Add smoked turkey, tomato, vinegar and red pepper flakes; toss until well mixed
- Add salt to taste
- Serve hot, passing grated Parmesan cheese separately
